feat: Add comprehensive tests for UUIDv7 validation #358

This commit introduces a comprehensive set of tests for the existing UUID version 7 validation logic. The implementation was already present in the codebase but lacked sufficient test coverage. The new tests in `test/rules/uuid.spec.js` cover: - Valid UUIDv7 strings that should pass validation. - Invalid UUIDv7 strings with incorrect versions or variants that should fail. This ensures that the UUIDv7 validation is robust and prevents future regressions.
